<p>Escaping the busy new year time in Athens I have escaped to Hydra. Here in the Saronic golf things are going slow and quiet. This is exactly what I was looking for. The weather is fabulous and I could enjoy lunch in a t-shirt. Being a <strong>chickpea</strong> lover I have prepared <strong>chickpeas with spinach</strong>. A delicious <strong>simple dish</strong> that tasted even better after all the rich Christmas food.<span id="more-644"></span></p>
<h3>Preparation time: 15 minutes</h3>

<h3>very simple recipe</h3>

<h4>Ingredients:</h4>
<ul>
<li>1/4 kilogram chickpeas (dry)</li>
<li>1/4 kilogram fresh spinach</li>
<li>one red onion</li>
<li>2 cloves of garlic</li>
<li>juice of 2 lemons</li>
<li>1 tea spoon of honey</li>
<li>salt and peper</li>
<li>some olive oil</li>
</ul>

<h2>preparation:</h2>
<p>Soak the chickpeas over night. Drain and then boil them. Boiling them for 15 minutes should do. You could also use canned chickpeas.</p>
<p>Wash the spinach well and chop it into pieces.</p>
<p>Cube the onions very fine and fry them in a pot with olive oil. Add the finely chopped garlic.</p>
<p>After a few minutes add the honey, salt and pepper. Add the spinach and fry for a few minutes. Now add the chickpeas, the lemon juice and some water. The ingredients should be just covered with liquid.</p>
<p>Simmer for 15 minutes.</p>
<p>Crush some chickpeas with a fork. The liquid will reduce and you will result with a thick sauce. The spinach will have become creamy.</p>
<p><strong>TIP:</strong> Serve with a slice of Feta cheese.</p>

<p>Reading the post of <a href="http://www.noovo.com/u/madelenelarkin/" target="_blank">Madelene</a> reminded me of my search for <strong>finger food</strong>. This dish seemed ideal for the party I had to cater for. Light, <strong>mediterranean dish</strong>, not Greek though. This was a request from the hosts. The <strong>Falafel</strong> I could even prepare a day in advance and just warm it up on the day of the party.<span id="more-167"></span></p>
<h4>Preparation time: 10 minutes<br />

Very simple recipe</h4>
<h2>Ingredients :</h2>

<li>250 gram of dried chickpeas</li>
<li>some olive oil for frying</li>
<li>2 tea spoons of grounded cumin</li>
<li>one large red onion</li>
<li>a clove of garlic</li>
<li>100 grams of grated parmesan cheese</li>
<li>one egg</li>
<li>fresh pepper and sea salt</li>
</ul>

<h2>Preparation:</h2>
<p>Soak the chickpeas in water over night. Boil them until they are soft. You can also use canned ones instead.<br />
Put the finely chopped onion in a pan and fry it until it takes some colour. Add the chopped garlic and stir for a minute or so.<br />
Put the drained chickpeas in a pot and mash them with a heavy wooden spoon or a similar utensil. I like the chickpeas being unevenly mashed. This gives the dish an interesting texture.<br />
Now add the onion, the garlic, the cumin, the egg and the cheese and mix well. Form little balls that you flatten before you fry them in some olive oil. Frying on each side for 3 minutes should do the job.</p>
<p>Tip: adding fresh chopped parsley or coriander gives the dish a special touch.</p>
