Zucchini Spaghetti

Pasta often is a easy to make dish. This recipe is particularly easy to make and tastes delicious. It only has few ingredients, the main one is Zucchini. I make this dish a lot when time is rare or I have a particular gusto for spaghetti.

Preparation time: 20 minutes

  • 2 large Zucchini
  • 1 red onion
  • 1 clove of garlic
  • some greek yoghurt
  • a touch of soup stock
  • Parmesan cheese
  • Olive oil
  • salt and pepper


Bring pasta water to boil. Add the pasta as soon as it boils.

Chop the onions and fry them in some oil. Grade the Zucchini and fry it with the onions. Add the chopped garlic and fry shortly. Noe add half a cup of water with some soup dissolved in it. Let it boil or a couple of minutes. Add the Greek yoghurt and some grated Parmesan cheese.

Drain the pasta and add to the Zucchini sauce. Mix well and let it sit for a couple of minutes. Serve with some extra Parmesan op top.

  5. Well, this is according to your taste. I use 2 to 3 tablespoons of yogurt.

    I made your dish for dinner two nights ago- I added one pot of yoghurt since I did not want the rest to sit in my fridge! All my dinner said it was delish … and that means alot coming from meat eaters! Thanks for the great dish – I will be trying out more of your dishes, I think the fennel bread and roasted fennel is next! =) cheers!
