Pasta often is a easy to make dish. This recipe is particularly easy to make and tastes delicious. It only has few ingredients, the main one is Zucchini. I make this dish a lot when time is rare or I have a particular gusto for spaghetti.
Preparation time: 20 minutes
- 2 large Zucchini
- 1 red onion
- 1 clove of garlic
- some greek yoghurt
- a touch of soup stock
- Parmesan cheese
- Olive oil
- salt and pepper
Bring pasta water to boil. Add the pasta as soon as it boils.
Chop the onions and fry them in some oil. Grade the Zucchini and fry it with the onions. Add the chopped garlic and fry shortly. Noe add half a cup of water with some soup dissolved in it. Let it boil or a couple of minutes. Add the Greek yoghurt and some grated Parmesan cheese.
Drain the pasta and add to the Zucchini sauce. Mix well and let it sit for a couple of minutes. Serve with some extra Parmesan op top.
