Zucchini Cheese soup
6 comments Feb 17th, 2010 | By Tobias | Category: Recipes, SoupsLooking through my RSS reader I discovered a Zucchini and Cheese soup at Joumanas blog. I had to modify the choice of cheese but the rest of the ingredients I had at home. A delicious soup for those who love a sip of a strong soup.
Preparation time: 5 minutes
Cooking time: 15 minutes
very simple recipe
Ingredients:
- 3 Zucchini
- 1 leek
- 100 gram of strong hard cheese (Kefalotiri or Parmigiano)
- salt and pepper
- some olive oil
- vegetable soup
Preparation:
Fry the chopped Zucchini and the leek in some oil in a pot. After a few minutes add some vegetable soup stock and let it simmer for 15 minutes. When the vegetables are cooked well blend the soup in a mixer. Return to the pot, add the cheese. Season with some fresh pepper. Let it boil for a minute. Ready to serve.












Sounds super delicious with Kefalotiri cheese!

Tobias, try the Laughing Cow cheese in this soup (as the French) have it. It emulsifies in the soup wonderfully. It’s a tasty and easy soup, as you probably discovered.
I will try it with that cheese too!

Sounds like a wonderful soup. To be completely honest, I have never been a huge fan of zucchini sauteed or boiled, but would devour it in a soup.
