Tomato soup

Another simple thing to cook and eat is tomato soup. Like most soups I like it has only few but fresh ingredients. This one is one of my favourite soups but you really need good tomatoes. My Manaviko (vegetable shop) has great Cretan tomatoes already. They are juicy and soft, just like tomatoes for the soup should be.

preparation time: 5 Minutes
cooking time: 15 minutes
easy recipe


  • 1 kilo of tomatoes
  • 1 red onion
  • 1 cube soup stock
  • a pinch of sugar
  • a sip of white wine
  • 1 TS Fennel seeds
  • some Olive oil
  • parmesan
  • salt and pepper


Cube the onions and fry them in a pot for a few minutes in Olive oil until they change colour. Add some sugar and caramelize. Crush the fennel seeds and add them. Cube the tomatoes and add them to the pot. Now add the soup stock dissolved in 1 liter of water and boil for 15 to 20 minutes.

Portion the soup in bowls and add some grated Parmesan cheese (optional)

  3. I love tomato soup! It is one of the first things I ever cooked and I did it just simple as you did. Herbs and tomatoes. It is still a winner for me.
