Sushi with fresh salmon

Eva, whom I had met in my Yoga classes had told me about a fish dealer in the central market that sells superb salmon. He even would be so honest to tell if the salmon was not fresh enough for Sushi. I instanltly wanted to try that out and so we met in the morning in Athinas street to do some shopping. As it turned out the fish was fresh and exquisit and we ate countless Sashimi and Sushi.

Preparation time: 25 minutes + the time until the rice has cooled down
preparation time: 30 minutes, according to your skills and the amount of sushi.
medium difficulty


  • 2 cups of sushi rice
  • 8 cl Japanese vinegar
  • some salt and sugar
  • Nori-leafes
  • fresh salmon
  • cucumber
  • avocado
  • Marouli salad

    The sushi looks great! although I don’t get a chance to go on the internet very often I do try to keep up with your recipes from time to time.
    I’m really curious about the fishmonger that you found. I have yet to buy fish from the central market and I would love a recommendation. Where can I find his stall in the market? I know it’s probably hard to explain because I don’t think the stands are named like in the meat market are they? But any information would be greatly appreciated

  3. Tobias, I hear you on finding very fresh salmon in Greece as it’s imported. Your rolls are well….well-rolled! You should try making some with local fish from the Greek seas too!

  4. I will do that. I was looking for Sfirida that day. As I prefer sushi with big fish it is quite expensive. I will try fresh tuna wehen I am on the islands!
