Stuffed Zucchini

These Zucchini or Courgettes stuffed with soft sheeps cheese, raisins and herbs are delicious. They are light and hearty, some grinded nuts give them a bit of a byte. Stuffed green squash is easy to do and no big efford to produce for a larger nubmer of guests.

preparation time: 10 minutes
baking time: 15 minutes

Ingredients:

  • 6 medium Zucchini
  • 200 gram soft sheeps cheese
  • 1 egg
  • 3 table spoons raisins
  • 2 table spoons nuts
  • Thyme
  • Basil
  • a tomato
  • bread crumbs
  • some olive oil
  • salt and pepper

Preparation:

Bring water to boil.

Empfty the Zucchini and boil for 5 to 10 minutes. The Zucchini schould be just over “al dente” when you remove it form the water. Put it aside to cool down.

Meanwhile chop the raisins and the nuts and mix with the egg and the cheese. add the herbs and season with salt and pepper.

Stuff the Zucchini with the cheese mixture and blade into an oiled, fireproof baking tray.

Place a tomato slice on top and sprinkle some bread crumbs over it. Bake for 15 minutes at 200 degrees centigrade.

  3. Wow you are right very quick to do with ingredients most people in the Med have already in the kitchen! Never cooked chevre with courgettes before ironically but I imagine it already tastes great!

  4. I have made stuffe zuchinni with meat but his just looks so so good. I would love to taste theis.
