With this recipe “Simplicity’s table by the sea” had participated my5th mediterranean cooking event . The topic was Morocco. It was as well the first time that i had read about a sweet coucous dish. Seffa de Couscous is common in Morocco and Algeria. It is served at special occasions.
Preparation time: 5 minutes
cooking time: 5 minutes,
- a cup of couscous
- dry figs, dates, apricots
- 2-3 spoons of sugar
- roasted almonds
- cardamon seeds,
- orange flower water
- rose water
Heat up 2 cups of water in a pot. dice the dried fruits and poach them in the boiling water. Add a cup of Couscous, 2 spoons of sugar and a few cardamon seeds. Let it all boil for a few seconds, then reduce the heat and let it soak. (The preparation of the couscous may vary according to the brand of coucscous)
Add the rosewater and orange flower water as well as the connamon. Cube the fresh fruits and add them to the soaking couscous.
Fry the almonds in a pan. Put the couscous onto a plate or bowl. Remove the cardamon seeds. Place the almonds on top and sprinkle some cinnamon over the dish.
