Saganaki, Σαγανάκι

You  can find all sorts of use of cooked cheese in the European cuisine. Raclette and Fondue are cooked a lot in central and western Europe. Here in Greece you can find Saganaki Cheese in every Taverna. It is a classic Mezze throughout the country. It is made of Kefalotiri, a hard goat cheese.

This dish needs to be cut and eaten fast to enjoy the melted cheese. It is easy to make and accompanies Wine and Ouzo perfectly.

Preparation time: 5 minutes

Zutaten:

  • a slice of Kefalotiri
  • juice of a lemon
  • a hand full of flour
  • salt and pepper

Preparation:

Cut the cheese into slices. The slices should be just a bit less thick than a finger.

Bathe the slice in a bowl of warm water. Then cover it with flour.

Fry the cheese in a pan adding some olive oil or butter. Fry until golden brown.

Serve instantly. Don’t forget to squeeze some lemon over it.

  9. Ok so since i married a Greek its all been about Greece. I am a preoffessional chef and can cook pretty much what ever i want, but Greek food has to be my favourite. They are very creative, fresh and diverse. I love this cheese dish. Simple yet delicious. I am coming to greece for my honeymoon in 3 weeks and intend to eat my way through the rest of country…. Lovely Blog!

  10. I’m not sure but do they serve this flambe style? I went to a Greek restaurant here several years ago and vaguely remember a wonderful cheese dish that I had there.

  11. @ ingrid: Indeed. I have had this dish flambeed with Metaxa. It was served to me like that on the island of Kalymnos.
