Roasted red peppers (Ψητές πιπεριές Φλωρίνης)5 comments Aug 2nd, 2009 | By Tobias | Category: Recipes, Salads and Dressings, Starters
Roasted red peppers belong to my absolute favourites. You can find them stuffed with goat cheese, I prefer them marinated though.
Especially the long, pointy and red “Piperies florinis” are Greece´s finest and take their name from the Florina region in western Macedonia. They are very juicy and sweet. They also peel very easily. Baked and marinated they make a great mezze served with ouzo or a glass of white wine.
Preparation time: 30 minutes
Very easy recipe
- 1 kilo of red peppers
- 4 cloves of garlic
- Sea salt, pepper, some olive oil
Wash the peppers and place them into a pan. Put them into the pre-heated oven at 180 degrees centigrade and let them bake for 30 minutes. When half of the time has passed, turn them once.
The peppers are done when the skin makes bubbles. Take them out of the oven and let them cool down a bit.
Meanwhile peel the garlic and cut it in half. Put it into a mortar with a teaspoon of sea salt. Add a pinch of pepper and turn it into a paste.
Back to the peppers! Remove the stem and the pits. Carefully pull off the skin. Collect the juices that come out of the peppers carefully in the pan.
Place the peppers in a bowl.
Add the collected juices and some olive oil to the mortar and mix. You now have a delicious marinade!
Pour the marinade over the peppers and let them soak. Enjoy at room temperature!
