Mint dressing

3 comments Apr 17th, 2010 | By | Category: Recipes, Salads and Dressings

My local vegetable store had fresh mint on sale. It smelled so nice and looked so good that I took a whole bag with me. A good way of using mint, I figured, is to make a dressing with it. the dressing goes well with salads as well as with fried vegetables. A refreshing taste in spring time.

Preparation time: 5 minutes

easy recipe

Ingredients:

  • a hand full of chopped mint
  • juice of a lemon
  • 4 ts of Greek yogurt
  • some honey
  • some olive oil
  • salt and pepper

Preparation:

Put the mint with some olive oil into the blender and process it.

squeeze the lemon juice into a bowl and dissolve the honey, the salt and the pepper in it. Add a little olive oil to it.

Add this mixture to the yogurt mixture and blend.

  1. Love mint; actually there is not a single Lebanese soul out there who does not grow it, even out of an old chamber pot! Love your dressing, gotta remember to add that honey!

  2. Sounds so refreshing, excellent dressing!

  3. Looks lovely and refreshing.
