Again a dish with melon. This time I combine a cucumber – sugar melon salad with marinated octopus. This juicy combination of tastes is perfect for the summer weather. A fresh salad combining the flavours of the Mediterranean.
Preparation time: 10 minutes + a few hours of cooling
cooking time: 30 minutes
- 450 gram of octopus
- a cucumber
- about the same amount of sugar melon
- juice of one lime
- juice of half a lemon
- Zest of a lemon
- 2 table spoons of chopped mint
- 2 table spoons of chopped parsley
- 2 table spoons of choped dill
- 2 table spoons of spring onions
- some olive oil
- coriander seeds
- salt and pepper
Peel the cucumber and dice it. Peel the melon and cut it into stripes. Add both to a bowl and put into the fridge.
Cut the boiled octopus into slices. The boiling process you can find at this recipe.
chop up the herbs and add to the bowl with the octopus. Also add the zest and the lime juice. Mix well and place in the fridge.
Just before serving the salad add the coriander seeds and the lemon juice to the cucumber and melon mix. Season with salt and pepper and place on the plate. Place the octopus on top. Add a touch of fresh pepper , drizzle some olive oil over it and serve.
