Lentil Salad
3 comments Jul 31st, 2009 | By Tobias | Category: Recipes, Salads and DressingsI love lentils but due to the summer heat, eating them as a soup is impossible. So I decided for a lentil salad. Served cold it tastes juicy and refreshing.
Preparation time: 20 minutes
Easy recipe
Ingredients:
- 250 gram dried lentils
- 1 large red onion
- 4 large carrots
- 4 cloves of garlic
- juice of a lemon
- a spoon of honey
- Salt, pepper, cumin, olive oil, a bay leave
- a soup cube
Preparation :
Soak the lentils over night in water.
Put them in a pot to boil. Add the peeled onion cut in half and the peeled carrots to the water. Add as well the unpeeled garlic cloves , the soup cube and the bay leave to the water.
Boil the lentils until “al dente”.
Drain the lentils and vegetables.
Chop the vegetables finely and put aside.
Remove the skin form the garlic and squash to a paste. Add the lemon juice, honey, cumin salt and pepper and mix well. Now add some olive oil. Your sauce is ready!
Mix the lentils, the vegetables and the sauce together and let the salad soak for a while before serving.

I have to congratulate you on making the photo ( and the lentils) look so appetizing! Whenever I shoot lentils they look like vomit instead!
