Lamb chops marinated with apricot sauce

In Greece lamb is very popular. Lamb chops are served a lot in the so called “Psitopoleio – Ψητοπωλείο“ or Grill house. I wanted something different though and decided to prepare my lamb chops this time with a marinade.
This apricot marinade is easy to make and goes very well with the pan fried meat. Provided that you like a hearty, sweet sour sauce with your meat. For my taste this sauce fits the taste of the lamb perfectly.

preparation time: 3 minutes
cooking time: 4-8 minutes

Ingredients:

  • 4-6 lamb chops, according to your appetite
  • 2 soup spoons apricot preserve
  • 2 soup spoons mustard
  • 1 soup spoon soy sauce
  • 1 teas spoon of each coriander seeds and pepper corns
  • a pinch of salt
  • 2 cloves of garlic, finely chopped
  • a splash of sunflower oil for frying

Preparation :

Heat the pan and add some oil. Salt the chops lightly and put them into the pan. Fry them on medium heat. On each side for about 3-4 minutes.
Meanwhile grind the pepper corns and the coriander in a mortar. Then mix them with the apricot preserve, the mustard and the soy sauce. Add the chopped garlic and stir well.
Pour the sauce over the almost done chops and let it fry for a minute or two. Take the pan off the heat and let it sit for a few minutes.
I serve this dish with oven potatoes or rice.

  3. I love lamb chops and have never considerd a glaze with apricot preserves. Love the iea.

  4. Though apricots do not go so well with other meats, apart from cured pork and duck, the sweet sharpness of the preserve goes perfectly with the taste of lamb. And I like very much the combination of Middle Eastern and Asian flavors.
