Cypriot rosemary chicken

2 comments Jun 25th, 2010 | By | Category: Meat and Poultry, Recipes

This is a recipe I brought home from my last trip to Cyprus. It was so tasty that I had to ask for the recipe. The dish is so easy to make, the recipe could have been my idea ;)
I serve this dish with rice and vegetables. Just delicious.

Preparation time: 5 minutes

cooking time: 25 minutes

difficulty: easy

Ingredients:

  • 2 chicken legs
  • 1/2 red onion
  • rosemary
  • some greens for soup
  • 200 ml cream
  • some olive oil
  • salt and pepper

Preparation:

Boil the chicken legs with the greens until they are just done. Drain them and let them cool down. If you want to do this dish for a couple of people, use a whole chicken and multiply the other ingredients.

Remove the skin. Then remove the meat form the bones.

Chop the onion very finely and fry it in a pot with some olive oil. Add the rosemary and the cream and let it boil for about 3 to 5 minutes. The liquid will have reduced. Then add the chicken pieces. Let it simmer for another 3 to 5 minutes. Season with salt and pepper and serve.

  1. Amazing recipe. I love rosemary and my mouth is watering just with the idea of the fantastic flavour of that chicken!
Hope you have a lovely weekend,
    Lia.

  2. How wonderfully simple and delicious! Seems to me it would be divine served over papardelle pasta, no?
    Thanks for this recipe, Tobias!
