This recipe was posted by Petra from Chili and Ciabata Blog for my Mediterranean cooking event. It is a dish that originates in Israel. The mustard, orange and honey go perfectly with the chicken. A delicious way of preparing chicken.
Preparation time: 10 minutes
Cooking time: 60 minutes
Ingredients for 2 servings
- 2 chicken legs and
- 6 wings
- 4 cloves of garlic
- 1 organic orange, juice and zest
- 1 organic lemon, juice and zest
- 4,3 fl oz orange juice
- 1 tbsp mustard seeds
- 2 tbsp mustard
- 2 tbsp honey
- 1 red chilli
- 10 apricots, dried
- salt and pepper
- olive oil
Heat the oven to 392 F.
Grind the peeled garlic with some salt and pepper in a mortar. Add half of the mustard seeds and grind them as well.
Add the orange juice, lemon juice and the zest and mix well using a spoon.
Wash the chicken parts then dry them with kitchen paper. Lay them out on a baking tray, add a little bit of olice oil to cover the tray and pour the content of the mortar over the chicken. Make sure all parts are well covered in the sauce.
Add the apricots and place the tray in the oven for about an hour.
