I had posted a similar chicken breast recipe a few days ago. I had prepared it with a sherry and raisins sauce. This one comes with a lemon and white wine sauce. This way of preparing chicken breasts results in a very juicy meat, because the breast is fried for a very short time only.
Preparation time: 5 minutes
Cooking time: 10 minutes
- a piece of chicken breast
- juice of half a lemon
- half a glas of white wine
- some butter
- some flour
- some olive oil
- salt and pepper
Slice up the chicken breast. Do not cut it entirely, you want to fold it up.
Once folded you place a plastic foil over it and flatten it with a hammer.
Heat oil in a pan. cut some butter cubes and sprinkle flour over them. Set them aside.
Squeeze some lemon juice and prepare half a glass of wine.
Fry the chicken breast for 3 minutes on one side, then turn it. Then meat should have taken some color by now. Once turned add the juice and the wine. Let it all cook for and other 3-4 minutes. Take out the meat and add the butter. By now the liquid should have reduced to less than half. The butter will thicken the sauce once you stir it a bit.
Place the meat on a plate and pour the sauce over it.
