This chilled Yogurt soup is called Cacik. It can be found in the eastern Mediterranean, especially in Turky. There is nothing more refreshing on a hot summer day, than a cold yogurt soup. This one has a fresh taste of cucumber and mint.
Preparation time: 20 minutes + some hours in the fridge
- 2 cucumbers
- 500 gram of Greek Yoghurt
- 500 ML milk
- 2 cloves of garlic
- 2 table spoons of chopped mint
- 2 table spoons of chopped raisins
- lemon juice
- 4 tabel spoons of pine seeds
- some olive oil
- salt and pepper
Peel and grate the cucumber. Salt it lightly and leave it in a colander to loose the water.
Meanwhile toast the pine nuts in a pan.
Chop the raisins roughly and let them soak in some water.
Chop the mint and dash the garlic in a mortar.
Drain the water from the cucumber, using a spoon, then put it into a bowl. Add the yogurt, the chopped mint, milk, lemon juice, garlic paste, salt and pepper. Place in the fridge to chill.
Mix the pine nuts with the mint, the drained raisins and some oil in a bowl.
Portion the soup in a bowls. Drizzle the oil, mint, raisin mix over it to serve.
