Boat Picnic IV – Lentil salad with ginger and peach

Again a salad that is ideal to be taken along on a Picnic. After having tasted this salad my friends and I decided that it was missing some fresh coriander. That’s why the coriander is added to the ingredients and recipe but can not be seen on the photo.

Preparation time: 20 minutes + soaking the lentils over night

difficulty: easy


  • 150 gram brown lentils
  • 1 large peach
  • 1 piece of ginger
  • half an onion
  • 2 cloves of garlic
  • juice of a lemon
  • a cup of vegetable stock
  • cumin
  • a hand full of fresh coriander
  • olive oil
  • salt and pepper


Soak the lentils over night in water. Then drain them. Then boil them until al dente.

Meanwhile cut a 3 cm piece of ginger and peel it. Peel as well the onion and the garlic. Dice the ingredients and put to a pan to saute in some oil.

Peel and dice the peach and add to the pan. Pour the soup into the pan, add the lentils and let it all simmer for 5 minutes.

Season with cumin, lemon juice, salt and pepper. let it cool down. Chop up the coriander and add to the lentils. Serve cold.

  2. I just made a lentil salad this week and hope to blog it soon. It’s nice to eat lentils, even in the summertime. This looks delicious.
