Boat Picnic I – Tomato and lentil salad with dried lemon

During the summer months I take refuge on a little island. But even here it gets hot, so we do boat trips to cool off and swim. This is always a great opportunity to do a picnic. Everybody brings a dish which leads usually to a surprise feast. Today I will present my tomato and lentil salad with dried lemon. Everybody loved the dried lemon!

preparation time: 10 minutes

baking time: 10 minutes

difficulty: easy


  • 200 gram dry lentils
  • 2 large tomatoes
  • one red onion
  • some olive oil
  • juice of one lemon
  • a lemon sliced up finely
  • a spoon of marmalade
  • half a tea spoon of cumin
  • a pinch of cinnamon
  • salt and pepper


Soak the lentils over night. Then boil them for 10 minutes and drain them. Put them aside.

Dice the tomatoes and the onion.

Slice the lemon as thin as possible. About 2 mm would be good. Then place the slices in the oven and bake them at 100 degrees centigrade for 1 hour.

For the sauce mix the lemon juice, cumin, cinnamon, the marmalade, salt, pepper and olive oil. Then mix them with the tomatoes, lentils, and onion. Garnish with the lemon slices.

  7. Lentils are a favourite and this salad is so pretty with the dried lemon on top… love the addition of marmalade; sound delicious.
