Beetroot salad with green pistachio sauce

This salad is easy to do if you can get a hold of pre-boiled beets. I do not mean the pickled ones, just boiled. I can get those beetroots here in 500 gram vacuum bags in the bio store. They taste great and turn this into a fantastically fast salad to do.

Preparation time: 5 minuntes

difficulty: easy


  • 500 gram beetroot, boiled
  • 150 pistachio nuts, peeled
  • a hand full of parsley leafs
  • a hand full of mint leafs
  • some juice of a lemon
  • a bit of lemon zest
  • a good sip of olive oil
  • a dash of sugar
  • salt and pepper


Peel the pistachios.
Pick a hand full of mint leafs and a hand full of parsley. Wash and dry the leafs. Put them into a blender. Add the pistachios.

Now add a bit of grated lemon zest. Not too much, it tends to be quite intense.

Season with salt and pepper and a bit of sugar. Add some lemon juice, half a cup of olive oil and a few drops of water and blend. Do not blend too smooth. The pistachios and the greens can still be a bit chunky.
