Beetroot and cherry salad8 comments Jun 23rd, 2010 | By Tobias | Category: Recipes, Salads and Dressings
I love using fruit in my salad. Having so many cherries around I took the opportunity to use them in a salad. They can be very well combined with beetroot and a bit of mint. I serve this salad chilled. A treat for a hot summer day.
preparation time: 10 minutes
- 250 gram beetroot boiled
- 100 gram fresh cherries
- a few leafs of mint
- some lemon juice
- some olive oil
- salt and pepper
Remove the pits from the cherries and cut them in half. Cube the beets. Put both into a bowl.
Chop the mint. Mix the lemon juice, salt and pepper in cup.
Pour the dressing over the salad and sprinkle the mint over it.
