Beetroot and cherry salad

I love using fruit in my salad. Having so many cherries around I took the opportunity to use them in a salad. They can be very well combined with beetroot and a bit of mint. I serve this salad chilled. A treat for a hot summer day.

preparation time: 10 minutes

difficulty: easy


  • 250 gram beetroot boiled
  • 100 gram fresh cherries
  • a few leafs of mint
  • some lemon juice
  • some olive oil
  • salt and pepper


Remove the pits from the cherries and cut them in half. Cube the beets. Put both into a bowl.

Chop the mint. Mix the lemon juice, salt and pepper in cup.

Pour the dressing over the salad and sprinkle the mint over it.

    I am buying them cooked, peeled and packed. In case you get fresh ones you will have to cook them until they are soft.
