Beetroot and apple salad with yogurt dressing and wallnuts

This salad awakens childhood memories in me. My mother used to make this salad for my father who came home for lunch. He always was into salads a lot and this one was one of his favourite ones.
Though it has lots of apple in it and also some honey in the dressing it is not a very sweet salad. Certainly not a desert. The addition of Greek yogurt with honey as a dressing is my creation, a Mediterranean variation.

Preparation time: 15 minutes

very easy recipe

Ingredients:

  • 1/2 kilo of boiled beetroot
  • 1/4 kilo of peeled apples/li>
  • juice of half a lemon
  • for the yogurt dressing:

  • 150 gram of Greek yogurt
  • juice of half a lemon
  • a table spoon of honey
  • a pinch of salt
  • 100 gram of hazelnuts, chopped

Preparation:

Grate the beetroot and the peeled apple into a bowl. Sprinkle the lemon juice over it an mix well.

For the dressing dissolve the honey and the salt with the lemon juice. Then dissolve the yogurt.

Crush the hazelnuts with a knife.

Place salad on a plate, pour some dressing over it and sprinkle nuts on top.

  2. Love beets! I noticed you don’t put any oil in that dressing, is it done like that? or did your dad like it this way?

  3. This is almost like the Greek version, beets, yoghurt, walnuts plus garlic and olive oil. I am sure that the addition of apples and honey would be a great addition.

  4. I made t without oil. The rather fat Greek yoghurt is enough I guess. Maybe a bit of a rather nutty oil could add some interesting flavour.
