baked olives under the Greek sun

Olives often miss a special touch when bought. Marinating them helps a lot to turn them into an experience. This time I did not have much time to marinate for days in order to have flavoured olives. I decided to do an instant marinating process. The added herbs, lemon peel,the wine and the garlic, soak into the olives very fast once heated up.
Ideal snack with a glass of wine.

Preparation time: 5 minutes
Cooking time: 30 minutes
Easy recipe


  • 400 gram black olives
  • 3 cloves of garlic
  • zest of half a lemon
  • bay leaves
  • a rosemary branch and some thyme
  • a sip of Ouzo or Pernod
  • a pinch of fresh pepper
  • red wine


Put the olives into a pan. Add all the ingredients and fill up with red wine until covered.
Broil in the oven at 200 degrees centigrade for 30 minutes. Stir occasionally.
Let it cool down and serve.
