Asparagus – Ginger Salad

No Comments » May 7th, 2010 | By | Category: Recipes, Salads and Dressings

I love green asparagus, especially served as salad. In this case I tried a slightly Asian version. The dish can be eaten cold as a salad or warm with rice.

preparation time: 30 minutes

difficulty: easy

  • green asparagus
  • 1 red pepper
  • ginger
  • 1/2 red chili pepper
  • Fish Sauce
  • some corn oil for frying

Peel the asparagus if necessary. Cut the hard ends and boil the asparagus until it is al dente. Then let it cool down a bit and cut it into large pieces.

Heat the oil in a pan. Cut the red pepper into stripes and fry. Peel and slice the ginger. Add to the pan. Add the chili pepper finely crushed. All the frying takes only about 3 minutes. Add a few splashes of the fish sauce and the asparagus. Toss. The asparagus is ready to be served.
