Apricot chicken

This is a recipe from my mother in law. She promised me that the chicken would be easy to prepare and taste delicious. I gave it a try and must say considering the fact that the recipe uses ready made products it is truly delicious.

Preparation time: 3 minutes

cooking time: 60 minutes

difficulty easy


  • 1 chicken cut in pieces
  • 1 pack of onion soup
  • 1 can of apricots
  • 2-3 potatoes
  • olive oil
  • salt and pepper


Have the butcher cut the chicken for you.

Oil a baking form with olive oil. Season the chicken pieces with salt and pepper. Place them in the form.

Peel the potatoes, cut them in quarters and place them with the chicken.

Pour the onion soup powder over the chicken and potatoes, then add the can of apricots. Cover the baking tray and place it in the pre heated oven for an hour at 180 degrees centigrade. for the last 15 minutes of baking time, remove the cover and turn on the broiler.

    My name is Jene, and I live in Vancouver, Washington. we are on the coast of the Pacific Ocean.
    U.S.A. My husband and I have joined Weight Watchers, and were doing very well, but I found a receipe from your site, it was Chicken and Apricots from your Mother in Law….It sounds so good, and Im sure if I cut down a little on the Honey, I could make it work for us. I want to use it for a dinner I am having, and no one is on Weight Watchers but my husband and I….I am using some of the Dips you show, and wanted to use the Chicken, and didn’t want everyone to think they were going to get WW food, or they may not show up, even tho a couple of them could stand to be. Laughing!!!!
    Anyway my problem is that I don’t know how hot the oven should be, 180 degrees centigrade , would that be around 350 degrees in the states?

    glad you like the recipe. Sure you can cur the honey as the Apricots, when ripe, contain enough sugar. You did figure it out right. 180 Celsius is 356 F.
