Salads and Dressings

Fennel Salad with prawns and orange

Feb 24th, 2010 | By Tobias | Category: Recipes, Salads and Dressings

A simple fruity salad that gives a hint of summer. I like salads that are a bit different. This one certainly is. Fennel, prawns, orange, lime and coriander make a colourful and exotic mix. The prawns make the salad almost a main course, at least for lunch.

Apple and Beetroot salad

Feb 5th, 2010 | By Tobias | Category: Recipes, Salads and Dressings

The nice thing about this salad is the dressing. The mix of sesame oil and W gives it an Asian touch. I marinate the beetroot for a couple of hours in the dressing. I like it a bit spicy, especially in winter. The combination of apple and beet root is classic,  though not often found [...]

Salad of Arugula and Zucchini with Chèvre

Jan 9th, 2010 | By Tobias | Category: Recipes, Salads and Dressings

I prepared this salad for a dinner lately and it was a big success. The combination if intensive tastes served on salad was very interesting. A prerequisite is that you like Chèvre (goat cheese) of course. I marinate the salad with a honey dressing, the pomegranate gives it a fruity touch and the truffle oil [...]

Warm cauliflower salad

Dec 2nd, 2009 | By Tobias | Category: Recipes, Salads and Dressings, Side Dishes, Starters

With the weather cooling down warm salads are more and more welcome. At this time of the year, I prefer a hearty, warm plate to a cold salad. This cauliflower salad con be served as a side dish, but it can serve as well as a whole meal, especially for lunch. I served it with [...]

Norma’s eggplant salad

Nov 15th, 2009 | By Tobias | Category: Recipes, Salads and Dressings, easy and fast

I had this dish for the first time at Jeanine’s place on the mountain in Hydra. I was stunned that eggplants could be so tasty. As Jeanine was kind enough to share the recipe with me I learned that the eggplants were poached, not fried. Until then I had never thought of poaching such a [...]

Mozzarella and Yoghurt salad

Oct 28th, 2009 | By Tobias | Category: Recipes, Salads and Dressings

This Mozzarella and Yoghurt salad is light and delicious without having any green in it. The fresh marjoram and lemon verbena in combination with lemon zest and a touch of chilli add an interesting taste to the Mozzarella di Buffola. If you like Mozzarella di Buffola this is a salad you should certainly try.

Marinated pumpkin with Mozzarella cheese

Oct 15th, 2009 | By Tobias | Category: Recipes, Salads and Dressings, Starters

I was looking for a different use for pumpkin as well as for Mozzarella. The good old soup and the good old Caprese seemed too boring. I came across a recipe for marinated pumpkin and so the combination with Mozzarella di Buffola was not too farfetched. The spicy pumpkin with its bite in addition to [...]

Roasted red peppers (Ψητές πιπεριές Φλωρίνης)

Aug 2nd, 2009 | By Tobias | Category: Recipes, Salads and Dressings, Starters

Roasted red peppers belong to my absolute favourites. You can find them stuffed with goat cheese, I prefer them marinated though.
Especially the long, pointy and red “Piperies florinis” are Greece´s finest and take their name from the Florina region in western Macedonia. They are very juicy and sweet. They also peel very easily. Baked and [...]

Lentil Salad

I love lentils but due to the summer heat, eating them as a soup is impossible. So I decided for a lentil salad. Served cold it tastes juicy and refreshing.

Peach and red pepper salad marinated in Tahini dressing

Jun 27th, 2009 | By Tobias | Category: Recipes, Salads and Dressings

When I told my girlfriend about this dressing she looked at me and told me that I probably would be eating alone. When the food was served she ate a lot and really loved it.
That happens to me quite often.
This dressing is special as the Tahini as well as the cumin are not very common [...]
